The Art of Cheese and Butter Making Course

Spend the day with Vivia from Sciapod dairy and learn how to make various cheeses and butter at home. You will dive into the world of milk composition; use of rennet; selecting and using ripening cultures and starter bacteria; setting the curd; cutting, draining and stirring the curd; moulding, milling and pressing the curd; and cheese ageing. You will make two types of cheese: hard ‘Cheddar-style’ and soft ‘lactic’ along with homemade butter and compound butter.

Vivia set up Sciapod dairy to discover the lost art of Suffolk cheesemaking. Why did cheese making in Suffolk get banned and how has it come now to be some of the best?  Vivia explored this to create her own cheese and butter recipes which she will share with you as an introduction to home dairy skills, whilst sharing some of the tales and history of Suffolk Cheeses. 

The course will run from 10.00am until 3.00pm and includes practical and demonstration cookery sessions, lunch and refreshments. All the ingredients, equipment and recipes for the day will be provided.
