Spring Seafood Kitchen
Date: Saturday 1st May
Time: 10am–3pm | Chef: Mike Warner – A Passion for Seafood
Celebrate the fresh flavours of spring on this hands-on seafood cookery day at the Food Hub Cookery School with Mike Warner of A Passion for Seafood.
Pairing British fish and shellfish with fresh herbs, spring greens and bright lemon dressings, you’ll learn to create lighter dishes that make the most of the season’s catch.
Mike will guide you through selecting, filleting, skinning and preparing fish, alongside essential shellfish preparation skills. You’ll explore simple cooking methods, learn how to recognise perfectly cooked fish and discover what to look for when buying seafood.
The day combines demonstrations with plenty of hands-on preparation and cooking, giving you time to practise your knife skills and learn recipes you can confidently recreate at home.
Recipes may include:
Fresh Crab with Lemon, Chives & Toasted Sourdough
Pan-Fried Plaice with Caper & Parsley Butter
Baked Hake with Spring Greens & Salsa Verde
Spring Fish Stew with New Potatoes & Fresh Herbs
Recipes will vary according to the course date, local landings and the best seafood available.
Suitable for beginners and confident home cooks alike, this relaxed, practical day will take the uncertainty out of buying, preparing and cooking fish.
Your day includes all ingredients and equipment, recipe notes to take home, refreshments throughout the day and a delicious light lunch featuring dishes prepared during the course.
