Winter Seafood Kitchen

Winter Seafood Kitchen
Date: Saturday 27th February
Time: 10am–3pm | Chef: Mike Warner – A Passion for Seafood

Discover the pleasures of cooking seafood in winter on this hands-on day at the Food Hub Cookery School with Mike Warner of A Passion for Seafood.

From warming mussels with cider and cream to beautifully cooked sole, you’ll explore comforting dishes and simple techniques that let the seafood shine. Along the way, Mike will share his knowledge of buying fish and shellfish, recognising quality and choosing what’s available at the fish counter.

You’ll build confidence in filleting, skinning and preparing fish, handling shellfish and mastering a range of cooking methods. Learn how to achieve crisp skin, tender flesh and perfectly cooked seafood, with practical tips you can use in your own kitchen.

The day combines demonstrations with plenty of hands-on preparation and cooking, giving you time to practise your knife skills and create delicious dishes to enjoy together.

Recipes may include:

  • Mussels with Cider, Cream & Herbs

  • Pan-Fried Mackerel with Lemon & Herb Dressing

  • Baked Salmon with Mustard & Herb Crumb

  • Classic Sole Meunière with Green Beans

Recipes may vary depending on availability and the best seafood on offer.

Suitable for beginners and confident home cooks alike, this relaxed, practical course will help take the uncertainty out of buying, preparing and cooking fish.

Your day includes all ingredients and equipment, recipe notes to take home, refreshments throughout the day and a delicious light lunch featuring dishes prepared during the course.
